Spiced Pear Energy Bars

Feeling sated or satisfied throughout the day can be a challenge if you don’t have the right snacks to munch on. Decrease your chances of derailing your diet by avoiding processed, convenience foods. Instead of reaching for chips from the vending machine, or even a store bought snack bar (that is often loaded with sugar), try making your own energy bars!  These Spiced Pear Energy Bars are packed with ingredients that are rich in fiber and protein, such as oats, flax, and wheat germ. Almond butter provides much of the protein in these bars, plus pears are also a great source of fiber (though be careful of how much dried fruit you use–they have higher sugar contents).  Each bar offers over 4g of fiber AND protein to help you feel full while you’re on the go!

Spiced Pear Energy Bars (makes 12, one serving = one bar)

1 cup dry oats (try a mix of steel cut and rolled for a chewy texture)
¾ cup dried unsweetened pears (or any unsweetened dried fruit)
⅓ cup ground flax
⅓ cup toasted wheat germ
¼ chopped walnuts
½ cup almond butter
1 ¼ tbsp. honey
2 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla extract

Combine all ingredients in a bowl and mix until ingredients are evenly incorporated. Next, line a 13×9 baking dish with wax paper.  Spread the mixture into the pan, creating an even layer.  Rest in the refrigerator for at least an hour for the ingredients to set, then cut into 12 bars.  Enjoy your fiber-filled and protein-rich homemade energy bars!
